Pumpkin Apple Streusel Muffin

Perhaps I was subconsciously still thinking of that Pumpkin Cider Cocktail. Consciously, however, it hadn’t occurred to me until completing this pumpkin muffin recipe, tasting the muffins a few times, and even editing the photos, that there are notable similarities, yet important differences. One is a cocktail, perfect for an evening affair. The other, a muffin, perfect to start your morning.

If you like to use seasonal ingredients, pumpkins and apples are going to dominate right now. And you know what?  I don’t mind that at all! These muffins taste like autumn and there’s a comforting feel that comes with that.

Cloud Topped Pumpkin Loaf

I’m so excited to tell you about my Cloud Topped Pumpkin Loaf. I think I may have come up with a totally new dessert! But I guess I have to admit that this all happened by accident. It’s all because I completely messed up the idea I had, failed horribly, total embarrassment to bakers. I hope none of my old pastry instructors read this blog.

More Pumpkin Lasagna Please!

When I first made pumpkin lasagna last year, I was afraid it wouldn’t work out so I made a small portion in an 8×8 dish. It turned out to be one of my favorite fall recipes, one that I am always bragging about to…well Lon and Ice (my dog). I’m just so proud of it. When pumpkins started showing up in the farmer’s market, I knew I was going to make this dish again. I figured I would re-do the old pictures, that did not do this Pumpkin Lasagna any justice. Then I realized the greater problem (yes, worse then how bad I was at photography back then). The portion was too small! You’ll never have enough with a 8×8 pan, even if you live by yourself. I swear. You won’t know how it just disappeared. I settled on making it in a conventional 9×13 dish, because that’s a pan size normal people own, but I really wish it was made in a giant roasting pan. Yea, the ones you can put a whole pig in. I love it that much.

Thanksgiving 2008 Series: Mini Pumpkin Pies

Happy Thanksgiving!

Both of us (Lon and I) don’t like Pumpkin Pie. I know. I know. So anti-Thanksgiving but…it’s the truth. One of my problems with pumpkin pie is that the filling is too much for me. Too what? I’m not sure, just too much, so I figured I might like it more if I made mini pumpkin pies so that I could work the ratio so that it’s more crust, less filling. I think it worked. I do like this more and so does Lon. Yippee!

Thanksgiving 2008 Series: Upside Down Cranberry Pumpkin Cake

Lon’s not a big fan of pumpkin. I like pumpkin but I don’t like pumpkin pie. So, for Thanksgiving, I had to come up with an alternative. This is a beautiful cake and perfect for those who don’t like things too sweet. The light cake, mildly pumpkin flavored, is topped with tangy cranberries and crunchy pecans, a very adult cake (but I bet kids will like it too).

Thanksgiving 2008 Series: Pumpkin Lasagna

As I mentioned, I’ll be working on recipes for you to use this Thanksgiving. This one is not one of your grandma’s recipes. It may seem a little out there and I won’t lie, I was nervous making it, thinking, what if this is crap? I don’t know where this idea even came from. Ideas just pop into my head from time to time, but just trust me. This is an incredible recipe. Lon was skeptical too, as he asked, what is that? Oh, and pumpkin, forget it. He was like, don’t give me a big piece. But in the end, he loved it.
