Chinese American Potato Salad

Finally! We moved, but it’s not all smooth sailing yet. We’re living out of boxes and we don’t have a kitchen yet. While our perfect kitchen is being built (which we will be talking about soon), I’m going to have to get crafty. I do have many plug-in appliances (rice cooker, toaster oven, panini press, waffle maker, microwave, etc.) so we’re still going to have a ball here. I think we’re going to be pleasantly surprised with how much I (or you) can do without a kitchen. (Gulp) Determined to eat well every single day without exceptions, here goes…

In grade school, one of my favorite packed lunches was a Potato Salad Sandwich. As a grade-schooler, I assumed that this potato salad was Chinese food because that’s what mom makes, Chinese food. It wasn’t until later that I realized that it didn’t really fit. Then, I started thinking it was just one of the few American dishes my mom knew how to make. She did make spaghetti occasionally too. Over time, I started to find that none of my American friend’s moms made potato salad this way. My friends would stare at my lunch and ask, what is that? That lead to the belief that it was just my mom’s own concoction. She has a lot of those so I thought nothing of it.

Buttered Baby Potatoes

I bought a colorful mix of baby potatoes  from the Union Square Green Market and had nothing particular in mind. When it was time to think about dinner, I decided on fish so I started thinking up a complimentary potato side. Roasted, mashed, and fried all seemed wrong, too heavy and too country to share a plate with a delicate filet, perhaps Sole or Turbot? For some reason, I was thinking about an elegant dinner with all the place settings, napkin holders, wine glasses, and all. I guess I was just day-dreaming about what would be impossible at the moment. We’re covered in cardboard boxes here, mostly partially packed ones. If you haven’t heard yet, we’re moving in 5 days!

Parsnip Gnocchi with Braised Oxtail

I’m quite fond of fatty meats and root vegetables together. It’s possible that both being winter foods, it becomes a familiar combination. But I’m convinced that it’s more than that. Parsnips, carrots, yams, sweet potato, and more are storage organs for the plant and typically contain more sugars and starches than other vegetables. It just works exceptionally well with fatty meats, standing up to it with more flavor and texture.

I’ve been thinking about parsnips and oxtail for a while, flipping from some kind of ravioli, to a mash, to a terrine, and finally deciding on a Parsnip Gnocchi with a Braised Oxtail Sauce.

Gado Gado with Beef

Whenever I have left-over steak, it becomes a steak salad or steak sandwich. The reincarnation must be something cold because I cannot stand reheating beef. I want it nice and rare or not at all. The other day, Caroline mentioned Gado Gado in a comment so it was fresh in my mind and I was now craving it, so that’s how this Gado Gado with Beef came about (it doesn’t usually have beef in it).

While I was going to depart from traditions anyway, I decided to take liberties to creating the color scheme I wanted and my dressing is not 100% authentic either. I absolutely love this version though and will make it again just like this for sure. (For a more authentic look, Rasa Malaysia has a great guest post from Indonesia-Eats. )

New England Clam Chowder

At the same supermarket where we picked up that delicious lobster, we also grabbed a variety of clams. I’ve been wanting to make some New England Clam Chowder, especially since I saw Bobby Flay’s Throwdown with the Brooklyn Chowder Surfer.

I’m a huge fan of clam anything, but especially clam chowder, and even more so, New England Clam Chowder (that’s the creamy style). Why, just yesterday I was talking about how I love dairy. Well Ben Sargent, the Chowda Suhfah (he’s Bostonian), seems to make a mean clam chowder, but doesn’t seem to have posted his recipe anywhere. So, I examined several of his video clips (on Throwdown, on Martha Stewart, and others) and came up with my own recipe. Hopefully, this does his grandfather proud.

Left-over Pockets

I have a shopping day planned with the girls (and cousin Phil) at Woodbury Commons and I wanted to pack a little treat for my friends. We have a long car ride ahead of us and then we’ll need lots of energy to power shop! I thought something like an empanada would be nice. It had to be a no-utensils-required kinda thing.

Shepherd’s PIE

It has always bothered me that Shepherd’s pie isn’t really a pie. The standard recipe is just a meat and veggie mixture thrown in a baking dish with mashed potatoes on top. What happened to the best part of the pie?!? The flaky buttery crust?!? Fear not! I have a remedy.

Yellowfin Un-Salad Nicoise

I happened to have tuna, string beans, and potatoes and I thought, perfect for a Nicoise. But, I wasn’t excited. Nicoise is pretty boring. So here’s my anti-Nicoise, still healthy, but a little Asian influence thrown in for fun. It’s actually three different dishes assembled together to make a yummy dinner. Each is very easy on it’s own. They key is to time it out for all three to be ready at once.

Home Fried Potatoes and a Cousins’ Brunch

My cousins came for brunch today and I asked Lon to make (and write the recipe) for Home Fried Potatoes. My only requirement was that I wanted him to use tomato paste. We agreed that it was a nice touch, adding both flavor and color to the dish. It turned out pretty spicy too but everyone loved it.
