Make Chicken Soup, Not War

I’ve been working on this post since the beginning of winter, when I first started thinking about chicken soups. The variety of chicken soups across so many cultures is just so interesting to me. They are all different, yet share that common bond, the ability to comfort anyone, and make each of us think of home.

Chicken Orzo Soup

There isn’t anything scientific in the post. I did not set out to prove or disprove anything, or even test any theories. This is not about one being better than the others. I just wanted to try several different recipes and methods, just to take notice and appreciate what each had to offer, and each one did have something special to offer. I will make all of these again, and I hope this post is useful for you each and every winter.

Lazy Chicken Sausage Soup

Lon and I aren’t feeling that great today so we didn’t want to go buy groceries. We didn’t want to spend a lot of time cooking. So this is what we got, Lazy Chicken Sausage Soup. It’s made with all things we had and takes a max of 10 minutes to make, and tastes quite good.

Pear Feta Orzo Salad

A little more than a week ago, I made a Roasted Garlic and Sun Dried Tomato Dressing, and I kind of got hooked on the flavor, craving it again. I wanted to show you just how versatile it is so I didn’t make the same salads. For the dinner with Sarah and Tim last night, I made an orzo salad.

Pasta Tasting – Course 1: Wilted Spinach and Tomato Orzo Salad

Tomorrow, I’m riding in the NYC Bike Tour with a group of friends. So tonight, I had them over for a preparatory pasta dinner. The idea is to have pasta so I decided on a three course pasta tasting. The first course would be a salad, yet still a pasta, but proportionately heavier on the vegetables because two more pasta courses would follow.

Wilted Spinach and Tomato Orzo Salad

  • 4 oz dry Whole Wheat Orzo
  • 1 teaspoon olive oil
  • 10 ounce package of pre-washed spinach
  • 3 cloves garlic, thinly sliced
  • 2 generous pinches of salt
  • 6 Campari Tomatoes, cut into 6-8 wedges each
  • 2 teaspoon good Olive Oil
  • 1 tablespoons Aged Cherry Flavored Balsamic (from O & Co.)
  • 3 tablespoons garlic cream (from the potato post)
  • Salt and Pepper to taste
