Cranberry Sauce with Mandarin Oranges and Walnuts

Growing up, my mom always made turkey for Thanksgiving. The stuffing was always a Chinese Sticky Rice (which I asked my mom to bring this year) and the rest of the dishes on the table were also Chinese. Basically, it was a Chinese meal with a Roasted Turkey as centerpiece. I give my mom a lot of credit for trying to provide us with the Thanksgiving experience. We certainly stuffed ourselves silly and we usually had tons of extended family over. All requisites met right? Well, one year I told my mom everyone else had cranberry sauce so from then on she started to buy canned cranberry sauce. It was that stuff that came out of the can in one solid cylinder and was then sliced into rings. While not much of it was ever really eaten, we kept up the American tradition. Then one year my mom got a recipe from somewhere ( at this point she doesn’t remember where she got it) that mixed canned cranberry sauce, canned mandarin oranges, and walnuts, plus a little gelatin to hold it together more. I loved it and never let my mom forget to make that cranberry sauce every year after.

After my brother and I grew up and moved out, my mom stopped hosting Thanksgiving. I’ve been spending it with Lon’s family for the last several years since it’s not a Chinese thing…It’s been a long time since I’ve had to do more than just bring one dish.

Pancake Inspired Cupcakes: Banana Nut

One of my favorite childhood memories was going to IHOP (International House of Pancakes) with my family. My mom and I both loved Banana Nut Pancakes (which I don’t see on their menu anymore these days but you can ask for it). For some reason, as a 6 year-old, I thought I was cooler than my brother, just for the sheer reason that I had the same favorite pancakes as my mom. I would share a giant stack with my mom, smiling all the way through the meal, because I just knew my mom liked me more. Yup, purely because my brother would order something else.

More Pumpkin Lasagna Please!

When I first made pumpkin lasagna last year, I was afraid it wouldn’t work out so I made a small portion in an 8×8 dish. It turned out to be one of my favorite fall recipes, one that I am always bragging about to…well Lon and Ice (my dog). I’m just so proud of it. When pumpkins started showing up in the farmer’s market, I knew I was going to make this dish again. I figured I would re-do the old pictures, that did not do this Pumpkin Lasagna any justice. Then I realized the greater problem (yes, worse then how bad I was at photography back then). The portion was too small! You’ll never have enough with a 8×8 pan, even if you live by yourself. I swear. You won’t know how it just disappeared. I settled on making it in a conventional 9×13 dish, because that’s a pan size normal people own, but I really wish it was made in a giant roasting pan. Yea, the ones you can put a whole pig in. I love it that much.

Maple Pecan Sticky Buns

For Carol’s election party, the theme was comfort food. After about 3 days of thought, I decided to make Maple Pecan Sticky Buns (found on epicurious.com). Now, these are pretty work intensive (and there’s a huge clean-up) so take a look at this process before you decide to make these.
