Chorizo and Butternut Squash Hash

I’m really into roasting potatoes with some fennel and sweet bell peppers and when I’m not serving vegetarians, little bits of ham or some bacon can add some smoky saltiness. Then one day, I wanted to turn that side dish into more of a meal. I crumbled some sausage in instead of the ham/bacon and threw an egg on top. Last weekend, my cousins came over and I mentally prepared to make that dish but when I started prepping, I realized we were out of potatoes. I dug through my fridge and thought maybe butternut squash would work. It did! The added sweetness counters the saltiness of the meat perfectly and the pop of orange color makes the whole dish so vibrant. I now wanted to write a recipe and post it so badly. I had more of all the ingredients except for the Italian sausage. That’s when another swap happened. This time I tried it with chorizo.

Remy Mussels with Bacon and Fennel

If you haven’t seen Jamie Oliver’s TED speech, you should. It is truly inspirational. One of the many great quantifiable and very attainable goals he proposes, is to make sure each child leaves high school with 10 recipes that will save their life. With just 10 recipes, we can minimize the amount of fast food America is eating, curb the number of deaths associated, and reduce obesity related suffering.

New England Clam Chowder

At the same supermarket where we picked up that delicious lobster, we also grabbed a variety of clams. I’ve been wanting to make some New England Clam Chowder, especially since I saw Bobby Flay’s Throwdown with the Brooklyn Chowder Surfer.

I’m a huge fan of clam anything, but especially clam chowder, and even more so, New England Clam Chowder (that’s the creamy style). Why, just yesterday I was talking about how I love dairy. Well Ben Sargent, the Chowda Suhfah (he’s Bostonian), seems to make a mean clam chowder, but doesn’t seem to have posted his recipe anywhere. So, I examined several of his video clips (on Throwdown, on Martha Stewart, and others) and came up with my own recipe. Hopefully, this does his grandfather proud.

Shrimp over Linguine in Tangy Lobster Sauce

Remember the lobster stock I made? It’s not that I haven’t been using it, it’s just that nothing I’ve made has been worth reporting, until tonight. I started reducing stock while I prepared the other ingredients.
